Reading and Thinking 课文精读 · 文化与美食

一、课文原文及逐段翻译

第1段

The French author Jean Anthelme Brillat-Savarin once wrote, “Tell me what you eat, and I will tell you what you are.” This is literally translated as “You are what you eat.” Simply stated, this means that the kind of food we consume reveals a lot about the kind of people we are.

法国作家让·安泰尔姆·布里亚-萨瓦兰曾写道:"告诉我你吃什么,我就能说出你是什么样的人。"这句话直译过来就是"人如其食"。简而言之,这意味着我们所吃的食物在很大程度上揭示了我们是什么样的人。

第2段

Certainly, in many ways this seems to be true. Chinese cuisine is a case in point. Prior to coming to China, my knowledge of Chinese cooking was limited to “chop suey” from the local takeaway back in America. But there was one thing I was certain of: the Chinese food I encountered in America was nothing like the food back home.

当然,从许多方面看这话不假。中国菜就是一个很好的例子。来中国之前,我对中式烹饪的了解仅限于美国当地外卖店的"杂碎"。但有一点是肯定的:我在美国吃到的中餐和家乡的(法国)食物毫无共同之处。

第3段

Later, I had a chance to experience authentic Chinese food by coming to China. When my family and I had just arrived in China, we went looking for a good place to eat in Beijing. A friend of ours had recommended a Sichuan restaurant, and eventually we found it. We were tired, hungry, and desperate for some comfort food. Not knowing a word of Chinese, we had no idea how to order, so the chef just began filling our table with the best food we could have imagined.

后来,我来华有机会品尝地道的中国菜。我和家人刚到中国时,便在北京寻找一家好餐馆。一位朋友推荐过一家川菜馆,我们最终找到了它。我们疲惫、饥饿,急切渴望一顿慰藉身心的美食。由于一个汉字也不认识,我们根本不知如何点餐,于是厨师径自把我们桌上摆满了能想到的最美味的食物。

第4段

We soon moved to Shandong Province in the eastern part of North China. My favourite dish there was boiled dumplings served with vinegar. I found the people there very friendly, and the food was wholesome and tasty. The dumpling is a traditional food in North China, and is often made by a whole family getting together. Later, I found out that the northerners tend to eat starchy foods, such as noodles, dumplings, and steamed buns.

不久,我们搬到了华北东部的山东省。那里我最喜爱的菜肴是蘸醋吃的煮水饺。我发现当地人十分友善,食物既健康又美味。水饺是华北的传统食物,常常由全家人聚在一起包制。后来我了解到,北方人往往吃含淀粉的主食,如面条、饺子和馒头。

第5段

Then we moved to northern Xinjiang. Some of our friends were Kazak and Inner Mongolian. These groups traditionally wandered the open range on horseback, so their traditional foods were what you could cook over an open fire — typically, lamb kebabs.

随后我们搬到了新疆北部。我们的一些朋友是哈萨克族和内蒙古人。这些民族传统上骑马在开阔的草原上游荡,因此他们的传统食物是能在明火上烹制的——通常就是羊肉串。

第6段

Our travels then took us to South China, and then on to central China. In each place we went, we experienced wonderful local dishes, from Guangdong’s delicate dim sum — small portions of food in small steamer baskets — to the hearty Henan stews. The food was as varied as the people. However, one thing remained constant: the Chinese people’s hospitality and kindness.

接着我们的旅程带我们去了华南,又到了华中。所到之处,我们都品尝了美妙的当地菜肴,从广东精致的点心——装在小小的蒸笼里的份量精致的食物——到河南丰盛的炖菜。食物和人一样丰富多彩。然而,有一件事始终未变:中国人的热情与善良。

第7段

At a minimum, the kinds of food local people consume tell us what they grow in their region, what kinds of lives they lead, and what they like and dislike. Can we also say, for example, that those who love strong flavours are bold? Or that those who love spicy food tend to have a hot temper? Maybe yes, maybe no. But what we can say is that culture and cuisine go hand in hand, and if you do not experience one, you can never really know the other.

至少,当地人食用的食物种类能告诉我们他们在当地种植什么、过着怎样的生活,以及他们的好恶。例如,我们能否也说,喜欢浓烈口味的人性格豪爽?或者说,爱吃辣的人往往脾气火暴?也许是的,也许又不是。但我们可以肯定地说,文化与美食密不可分;若不体验其一,便永远无法真正了解其二。

五、长难句拆解

【原句 1】The French author Jean Anthelme Brillat-Savarin once wrote, “Tell me what you eat, and I will tell you what you are.”
【主干】The author wrote, “...”.
【分层】Jean Anthelme Brillat-Savarin 为同位语解释 the French author;直接引语内含两个 what 宾语从句(what you eat / what you are),由 and 连接。
【译文】法国作家布里亚-萨瓦兰曾写道:"告诉我你吃什么,我就能说出你是什么样的人。"
【考点】同位语;直接引语;what 宾语从句。

【原句 2】Simply stated, this means that the kind of food we consume reveals a lot about the kind of people we are.
【主干】this means that ...(宾语从句)。
【分层】Simply stated 为过去分词作状语(插入语化);that 引导宾语从句,其主语 the kind of food 后接定语从句 we consume,宾语 the kind of people 后接定语从句 we are(省略 that)。
【译文】简而言之,这意味着我们所吃的食物在很大程度上揭示了我们是什么样的人。
【考点】过去分词作状语;that 宾语从句嵌套两处省略 that 的定语从句。

【原句 3】Not knowing a word of Chinese, we had no idea how to order, so the chef just began filling our table with the best food we could have imagined.
【主干】we had no idea ..., so the chef began filling ...
【分层】Not knowing ... 为现在分词否定式作原因状语;how to order 为"疑问词 + 不定式"作 had no idea 的宾语;so 引导结果状语从句;with the best food 为方式状语,后接定语从句 we could have imagined。
【译文】由于一个汉字也不认识,我们根本不知如何点餐,于是厨师径自把我们桌上摆满了能想到的最美味的食物。
【考点】现在分词作原因状语;疑问词 + 不定式;so 结果状语从句;定语从句。

【原句 4】The dumpling is a traditional food in North China, and is often made by a whole family getting together.
【主干】The dumpling is a traditional food, and is made by a family.
【分层】and 连接两个并列谓语(is ... and is made);getting together 为动名词短语作介词 by 的宾语,表"全家聚在一起(包制)"的方式。
【译文】水饺是华北的传统食物,而且常常由全家人聚在一起包制。
【考点】并列谓语;被动语态;动名词作介词宾语。

【原句 5】But what we can say is that culture and cuisine go hand in hand, and if you do not experience one, you can never really know the other.
【主干】what we can say is that ...(主语从句 + 表语从句)。
【分层】what we can say 为主语从句;that 引导表语从句,其内部 and 连接两个分句,后一分句含 if 条件状语从句(experience one / know the other 中 one、the other 指代 culture 与 cuisine)。
【译文】但我们可以肯定地说,文化与美食密不可分;若不体验其一,便永远无法真正了解其二。
【考点】what 主语从句;that 表语从句;if 条件状语从句;代词 one/the other 指代。

六、语法点清单

1. 直接引语与转述
布里亚-萨瓦兰的原话直接引出,随后 "This is literally translated as ..." 进行转述与解读。

2. 定语从句(省略 that / who)
we consume;we are;those who love strong flavours / spicy food。注意定语从句紧跟被修饰名词。

3. 现在分词作状语
Not knowing a word of Chinese(原因);getting together(介词宾语)。分词逻辑主语须与句子主语一致。

4. 比较结构 as ... as
The food was as varied as the people。as ... as 原级比较,连接两个名词短语。

5. what 引导名词性从句
what you eat / what you are / what we can say / what they grow。what = "the thing(s) that",兼连接与先行功能。

6. 并列与因果(and / so / but / if)
全文以 and / but 串联游历见闻,so 表结果,if 表条件,逻辑清晰。
